Revolutionising Food Court Wastewater Management with HyDAF-GT
February 13, 2025
Food courts have been an integral part of daily life for Australians since 1965, when the country’s first food court was opened at a suburban shopping centre in Sydney. Since then, numerous food courts offering cuisines from around the world have sprung up across the country.

However, managing the waste produced by food courts has long been a challenge for centre management. Wastewater from food courts is often high in grease, contains large and unwanted food scraps, and is prone to causing blockages in pipelines – issues that are both costly and time-consuming to resolve. In recent years, the focus on treating food court wastewater before discharge has increased, driven by water authorities tightening regulations to protect the ageing and often vulnerable underground sewer networks from blockages and overflows.
“As the market leader in DAF technology in Oceania, Hydroflux introduced the HyDAF-GT to the Australian market over a decade ago. Designed specifically for food court and commercial kitchen wastewater, the HyDAF-GT solution ensures reliable operation of wastewater treatment systems while minimising ongoing maintenance requirements.” said Hydroflux GT-DAF specialist, John Zhao. “Hydroflux works closely with developers, centre management, and water utilities nationwide to deliver an onsite wastewater treatment system to minimise maintenance requirements and maximise efficiency.
“On average, only 5 – 10 minutes a day is required for a part-time operator to inspect and maintain the plant.” John added.

A number of innovated features are integrated into the HyDAF-GT system to achieve this. These include an upfront rotary drum screen that removes and macerates large food scraps before treatment to prevent blockages, an optional remote sludge transfer station to facilitate off-site sludge disposal even for installations in sub-basement locations, and a uniquely designed hot water flush system that targets grease and oil deposition on the equipment. The HyDAF-GT also has a footprint that is approximately 30% smaller than traditional DAF systems, allowing more ‘prime real estate’ to be allocated to parking spaces and storefronts.
The HyDAF-GT system is available as a standalone unit for plumbers and builders or as a turnkey package for complete peace of mind. With over 30 installations across the country, Hydroflux’s experienced engineering team also provides comprehensive support, guiding management through every stage, from conceptual design to aftermarket support.
